Kimchi Fried Rice

Ingredients

Sesame oil

1 cup water

2 cups leftover rice

1/4-1/2 cup soy sauce

1 whole carrot, cut into small pieces

1/4 yellow or sweet onion, cut into small pieces

1 green onion , sliced thick

1/4 cup kimchi, cut into small pieces

Directions

1. Put a drizzle of sesame oil in large pan on medium high heat. When pan is hot, add cold rice and 1/4 cup of water. Cover for 1-2 minutes. Stir rice and add another 1/4 cup of water if pan is dry. Cover 1-2 minutes.

2. Once the water has evaporated again, add carrots and onion to the pan, then drizzle with sesame oil and add soy sauce. Stir to combine and let cover for 3-4 minutes.

3. Add remaining ingredients to pan and stir to combine. You may add extra soy sauce or sesame oil, if desired. Let pan sit about 5 minutes, stirring occasionally. I like my fried rice to have a few crispy pieces, so I sometimes leave it longer.

4. Top with your favorite protein and enjoy!
